Good For The Soul.


Giovanni has a stomach bug so I made him homemade chicken noodle soup-it was yummy, easy to make, and healthy, too. :)

This makes a LOT of soup.

I got this recipe from a website, and changed it a lot. We like a lot of juice, but you could easily change the recipe to have less broth and more vegetables.

Butter (or a healthier substitute...we like I Can't Believe It's Not Butter)
1 1/2 pounds of chicken
3 cups chopped carrots
4 boxes (32 oz.) chicken stock (I used organic Swanson's.)
2 cans vegetable broth (15 oz.)
1 bag egg noodles
1 1/2 cups chopped celery
1 cup chopped onion
1 teaspoon oregano
1 teaspoon basil
Salt & pepper

Chop up the chicken, and place in a (large!) pot with celery, carrots and onions. Add butter (or substitute) and cook until chicken is no longer pink, then add the chicken stock, vegetable stock, oregano, and basil. (You can substitute 1 and a half teaspoons of Italian seasoning if you don't have oregano and basil.) Bring to a boil, then lower the heat a little and cook until the carrots are tender (mine took about 15 minutes.). Add the egg noodles and cook until they're soft (about 9 minutes.). Add salt and pepper if needed.

Aw, that's sweet! He did get better...I knew he would (or at least fake getting better) because he had to work today, and he hates to miss work. :)

That looks good! Dawson and I both had the bug last week...so we had the good ole Cambells! Yours looks much more tasty!

Nothing wrong with Campbell's! :) The only reason I put so much effort into it was because he was the only sick one...had I been sick, too, I don't think I would have even done Campbell's.
